For those who don’t know, I’m on a low carb, moderate protein, high fat diet – you can read a little bit more about it here  and my biggest challenge at the beginning of this journey was actually to find healthier alternatives to dishes that I love.

For that, I reinvented some of my recipes with more healthier alternative foods, so I thought this would be a good start since so many of you have asked me to share what I eat. Don’t worry I’m preparing more posts like this one!

I find these dishes work well if you want to have a healthier meal, it’s not strictly for people who are following my lifestyle.

The first two dishes have as a base Zucchini Spaghetti , I’ve seen people eating this for ages and was never convinced, until I needed to ditch the pasta and find an alternative, it’s not the same of course but it’s pretty tasty too!
Zucchini Spaghetti Bolognese

Ingredients: 

500gr Minced Meat – if you are vegetarian, use your alternative

1/2 onion ( not advised if you are on a very strict ketogenic plan, but I don’t know how to cook without onions!)

salt to taste

mixed herbs to taste (optional)

3 tablespoons of Olive oil

1 bay leave

red wine to taste

400g ready chopped tomatoes (try to find the lowest carb option)

1 Zucchini (approx 400g)

Spiralizer

(Serves 4)

Grab a pan and slice the onion in small pieces, add the bay leave, the olive oil and leave it on the heat until onion is transparent or starting to get golden.

Add the minced meat, give it a stir and leave it to cook a little bit, after about 3 minutes add the red wine, the salt and herbs ( to taste), leave it to cook for about 25 minutes.

Meanwhile, get your spiralizer and start doing your Zucchini Spaghetti. Place it in a bowl and voilá!

It’s ready to serve!

Zucchini Spaghetti Carbonara

Ingredients:

300 ml of Heavy Cream

Black pepper (to taste)

Bacon or Pancetta

250g Fresh Brown Mushrooms sliced

Parmesan cheese (grinded, to taste)

1 Zucchini (approx. 400g)

Spiralizer

(Serves 4)

Get a big frying pan or Wok,  I usually start by cooking slightly the bacon, after that add my sliced mushrooms and leave it to simmer until the mushrooms are cooked.

Then add the heavy cream and pepper to taste and leave it to simmer until slightly thick.

Meanwhile, get your spiralizer and start doing your Zucchini Spaghetti. Place it in a bowl and voilá!

It’s ready to serve and don’t forget that parmesan on top!

Prawn Curry with Cauliflower Rice

Ingredients: 

1/2 Raw Cauliflower

2 tablespoons of Curry Powder

1 tablespoon of Cumin powder

1/2 onion (not advised if you are on a very strict ketogenic plan, but I don’t know how to cook without onions!)

1 dried chilli

400 ml Coconut milk ( try to find the lowest carb option)

3 tablespoons of Virgin Coconut oil

400 ml of Ready Chopped tomatoes ( try to find the lowest carb option)

400 g of Raw peeled prawns ( can be frozen)

Food processor

(Serves 4) 

I start by mixing my spices in a bowl, it’s ready when you need to pour it in the pan.

Get a pan, slice the onion in small pieces and add the coconut oil, leave it to simmer until onion is transparent or starting to get golden. Then, add your spices and mix it with the onion and coconut oil and stir for a minute or so – don’t let it burn! It is really important that they don’t burn! 

Add the coconut milk and at this point you’ll have a nice bright yellow mixture, leave it to cook about 5 minutes and add the chopped tomatoes, leave it to simmer, stirring it occasionally so the spices don’t stick to the bottom of the pan.

When it’s boiling,  add the prawns and close the pan until the prawns are cooked. Be aware that if you use frozen prawns they will release a bit of water so let it boil until the sauce it’s not to liquidy.

Meanwhile, get you food processor and start processing the cauliflower, once it’s done place all the cauliflower “rice” in a bowl, cover it with cling film – make 2 or 3 holes – and place it in the microwave for 5 minutes. I usually, program 3 minutes, then give it a stir and place another 2 minutes.

That’s it, once you are happy with the curry, just serve it with the cauliflower rice!

  1. Já tinha visto algumas receitas de noodles de courgette. No entanto, como sigo uma dieta que é o total oposto da tua – alta em hidratos de carbono e baixa em gordura – nunca cheguei a fazer, porque iria ficar com fome e sem ingerir as calorias suficientes. Mas que tem bom aspeto é inegável, ali aquele de cogumelos!
